Goat Milk Lavender Strawberry Ice Cream

Ingredients

  

  • 1 egg

  • 1/2 cup honey

  • 1/8 teaspoon Celtic sea salt

  • 2 cups chopped strawberries

  • 1 cup half-and-half cream (goat milk or cow’s depending on your needs and preferences)

  • 4 cups whole fat goat’s milk

  • 1 lavender sprig

Instructions

 

  • Heat the sauce pan over medium heat. Add the honey, salt, half-and-half, milk and lavender mixture in the pan.

  • Whisk the egg briskly, then add it to the above mixture.

  • Heat slowly, stirring with a wooden spoon, just to a simmer (don’t allow to come to a full boil), then take off heat and cover with a lid for 10 minutes.

  • Remove the lavender sprig.

  • Cool milk mixture in fridge or freezer until cold.

  • Pour into ice cream machine and freeze according to machine’s directions. Add 2/3 of the strawberries while ice cream is freezing in machine then add the rest 1/3 as a topping.
